You know by now we're gigantic fans of the Matheson Food Company Mac and Cheese from chef Matty Matheson. As good as it is on its own—and its very good—we've been playing around with ways to enhance it! So here's a little recipe, without an entire life story that often comes with online recipes!
Elevated Matty Mac recipe
1 box of Matty Mac—your choice! I went with Pep Pep
1 1/2 cup of mushrooms, chopped
1 cup kale, shredded
1 clove of garlic, minced
2 scoops of butter
1/3 cup milk
Step 1: Cook the Mac to box instructions (you'll need the milk and one of the scoops of butter for that!)
Step 2: After you've added the noodles to the boiling water to get them cooking, melt the other scoop of butter in a pan on medium-high heat.
Step 3: When the butter has melted, mince the garlic and add it.
Step 4: Let the garlic cook for a minute, stirring occasionally to let that garlic fully mix into the butter.
Step 5: Add the mushrooms and kale to the pan.
Step 6: After 6ish minutes of cooking the pasta noodles, the garlic veggies should also be done! Once you drain the noodles, add them back to the pot with the milk and butter. Toss in the veggies before adding the cheese powder and then mix away!
Step 7: ENJOY!
